Let's just say a moderately-sized 4-channel amp, where would be the best place to hide it un-noticed in a 2dr Jimmy? Are there any safe places it can be mounted out of sight? (Note, I have the spare-tire in the trunk)

I just did an amp and sub in my two dr blazer and I made an amp rack on the side of the box. It looks good, not hidden but it doesn't take up any space that I would have been using anyway. I have the spare tire also and i but the box inbetween the wheel well and back 'wall' opposite the tire. I was also considering puting it on the floor behind the driver seat and just making a wood cover to go over it when someone would sit there. I'm happy with my setup. The rack goes over the wheel well btw.

bolted to the back of the box keeps it out of sight and looks clean.

i've got mine bolted to one of those little flaps on the back of the seat, i drilled 2 holes on both sides of the amp to run the wires through, looks very clean and professional..

I'll post pictures as soon as I can, I'm having camera issues right now. I built an amp rack for the side of the box that the actual amp goes on.

another benefit of having it on the back of the box or seat flap is being able to flip down the seat and open a window for cooling it on a hot day. I do it in the summer if it will be a lengthy trip.......or just to watch the digital readout
