I couldn't find anything for the S-series blazers, but I just took a look at the new Trailblazer on Chevy's website and here's the differences:

LT has optional two-tone exterior paint while it is not available for the LS
LT has standard deep tinted rear glass while its only optional on the LS
LT has standard luggage rack while it's optional on the LS
LT doesn't get foldaway mirrors while they are standard on the LS
LT gets power mirrors while this is optional on the LS
LT gets optional dual power/heated mirrors while this is not available on the LS
LT gets optional dual power/heated mirrors with memory again, not available on the LS
LT 4x4 gets standard recovery hooks while only an option on the 4x4 LS
LT gets optional intermittent wipers with rainsense while it's not available on the LS

I'll keep on looking to try to get options list for the s-series. If someone has a blazer brochure, it would have all of this on it.

LT has leather interior, LS has cloth interior.
As for any other options I'm not for knowing.
I have a 95 LS with cloth, and a 96 LT with leather, every thing else is the same other then the rims.

I have seen some LTs with cloth. I believe leather was optional in the LT, but not available in the LS.

LT also has some convience options not available in the LS. But I think the leather seats and sun roof where the biggys.

Yup, that sounds about right. What I had listed was for the new Trailblazer just taken from Chevy.com. Earlier trim levels had more standard features in the upscale trim, but most were available as options in the lower trim level. GM is doing away with much of that, forcing you to get an upgraded trim level inorder to get some convenience options. It does cut down on their special orders I do suppose.
